Pumpkin Soup...

We eat pumpkins in almost all forms..fried, boiled, and also by mixing it with other vegetables to make a tasty and delicious vegetable side dish. It has several nutritions such as calcium, carbohydrate,dietary fiber, foliate, iron, magnesium and beta carotene which is also a powerful anti-oxidants.

Here I am giving you a quick and easy soup recipe made with pumpkin.

Ingredients: Pumpkin (chopped) : 500 gms, Onions : 2 medium, Salt and pepper, Chicken or meat stock : 1 and half litres, Cream : half cup, Egg yolk : 1

Method: Boil the chopped pumpkin and onion in the stock. Sieve through a strainer when soft. Beat egg and cream well and beat into the soup. Add salt and pepper and heat before serving.
